Florian & Aurore Laval


- Champagne Florian & Aurore Laval is a 6.5 hectare family estate located in the Marne Valley , in the village of Boursault📍
- A rich terroir, the Marne Valley is often called "La Bourgogne Champenoise" due to the complexity of its terroirs (Clay-Sandy, Heavy Clay, Clay-Silty, etc.)!
- The Estate is located on the left wing of the Valley with a northern exposure. The vineyard is mainly planted with Meunier (70%) , the rest with Pinot Noir (28%) and Chardonnay (2%) .
Today, the Domaine is run by Florian and his sister Aurore, who both took over the estate in 2019. Until now, the estate was run by their father Michel (SEE PHOTO BELOW), who founded his own brand in 1979. Until his children took over the Domaine, Champagne Michel Laval was produced in a Cooperative. Michel worked in the vineyard throughout the year, right up until the harvest... Once the grapes were picked, they were sent to the village Cooperative, where the rest of the production (vinification, aging, maturation, etc.) up to bottling took place! Florian and Aurore's father collected his own bottles once they were ready to be marketed...


Awareness and return to the Sources...
They say that in life, nothing happens by chance!! Well, that's the case for Florian... Fired from his old job in a printing house in the Champagne region in 2019, he realized he had the unique opportunity to own a treasure, he decided with conviction to return to the family business and take his sister with him on a new adventure but on one condition: Create their own Champagnes and have TOTAL control from A to Z!
What pride for the entire Laval family and especially Florian and Aurore's grandparents who were already Champagne producers themselves. The story begins in 1870 when their great-great-grandfather Georges inherited 40 ares of farmland and decided to grow grapes with his son Jules! But it was in 1948 with Roger and Fabienne (SEE PHOTO ABOVE) Jules' daughter and Florian & Aurore's grandmother, that the Domaine took a turning point by starting to produce Champagne and not just grow it! They thus achieved a symbolic turning point for the future of the Laval Family by wanting to be able to taste their harvest, the fruit of hard work. Roger, for his part, will never stop searching and exploring the rich and diverse terroir of Boursault to create champagnes with true identities. Michel, who is none other than the son of Roger and Fabienne, also embraces his destiny by creating his own brand, thus perpetuating the family values while modernizing the cultivation practices of the vineyard and the work of the soil.

In the Marne Valley, the soil is mainly clay-limestone (SEE PHOTO ABOVE), often with a tendency towards marl . We can find green clays called "illite" as well as marl, silt and sand. This composition creates a terroir with specific characteristics that favor the cultivation of vines, mainly planted with Meunier (+ or - 60%). We will also find other grape varieties such as Pinot Noir, Chardonnay and also the lost grape varieties (Arbanne, Petit Meslier, Pinot Blanc and Pinot Gris).
The soil contains both clay and limestone. Clay provides water retention and structure to the soil; in other words, it retains water, nourishes the vine, and shapes the character of the future wine. Limestone improves drainage and provides mineral elements. Marl is a rock composed of clay and limestone, often soft. In this Valley, the marl tendency can be observed, indicating a soil richer in clay and therefore more humid. Clay-limestone soils offer a good balance between water retention and drainage, which is beneficial for the vine, especially in a climate like that of the Marne Valley. Clay-limestone soils contribute to the typicality of the Champagnes of this region... Clay, rich in magnesium and iron, provides a beautiful acidity and prolongs the length of the Champagne. They allow the development of wines that are both rich and round, fresh and complex, with mineral aromas and an elegant structure!

The Philosophy of the New Generation...
"Telling the story of one's wines to give memory to the ephemeral!" This is the motto of Florian & Aurore Laval. So here we are in 2020... it's the year it all begins, it's the year of the very first vinification, of the very first vintage, which was a great year in perspective for the Domaine! Their commitment is to respect their terroirs and more generally the living things that compose it, their desire is to intervene only when necessary in order to preserve what nature has given us!
Their philosophy is to create wines to have exceptional moments of life and sharing! Give a definition to the word "Drunkenness" which is not a negativity contrary to what one might think... Drunkenness is simply an excess, but it can be an excess in the good sense of the term: Excess of good times with our family and friends... excess of joy in sharing wine and in our life in general. In other words, all moments are good to taste Champagne... life is a celebration!
In 2025, the Laval vineyard is divided into 3 sections: 35% of the exploitation is intended for personal vinification and therefore for the production of the 3 Cuvées of the range (Symposium, Ut Prius and Olim Rosé), 35% of the grapes are sold in cooperative with the aim of bringing in cash each year (in the future and depending on the evolution of the Estate, this rate could well decrease to the detriment of personal vinification in order to increase the production of the current range) and 30% are intended for the sale of grapes by the kg at the time of the harvest either to the Champagne Houses or to other Winegrowers. Let us just remember that 90% of the entire Champagne Vineyard (34,300 Hectares) belongs to the Winegrowers!
Today, Florian mainly takes care of the vinification of the wines as well as the marketing, he is also present in the vineyard with some work in the vineyard including plowing the land with the tractor. Aurore, for her part, is much more present in the manual work of the vineyard and also takes care of the staff and the administration... a great team effort and that as a family! They are also part of the winegrowers who do not yet have certification in Organic Agriculture or Biodynamics but the work is just as respectful. They even apply certain viticulture methods worthy of these labels such as Biodynamic preparations (Nettle, Horsetail, Willow,...) to strengthen the immune system of the vine plants and also the rule of not using any pesticides (Herbicide, Insecticide and Fungicide) in the vineyard... They only intervene when the situation becomes critical, in other words, it is a great approach that prepares the vineyard to receive these famous certifications!
