BLANC DE NOIRS
A "Blanc de Noirs" Champagne refers to a wine made exclusively from black-skinned grapes! In the blend, we may therefore find one or two black grape varieties such as Pinot Noir and Meunier. Their flesh, and therefore the juice that will give its color to the future Champagne wine, is white. It is during pressing that contact between the juice and the skins is limited as much as possible to prevent it from coloring.
These Champagne wines give an impression of power, density, structure, and structure. They generally have more body than wines that incorporate white grape varieties in their blend. They also exhibit what is called "Vinosity". A vinous Champagne is a wine with a powerful body. The term refers to the sensation of warmth in the mouth. In this respect, these Champagne wines contrast with other lighter, more airy wines. Pinot Noir and Meunier reveal notes of White and Yellow Flesh Fruits (Peach, Apricot, Plum, Mirabelle Plum), but also Red Fruits (Strawberry, Raspberry, Cherry), Black Fruits (Blackberry, Blueberry), Citrus Fruits (Mandarin, Orange), Exotic Fruits (Mango, Passion Fruit), Floral hints (Rose, Peony, Violet) and sometimes Spices (Cinnamon, Clove). As it ages, it will take on notes of Coffee, Cocoa, Prune and sometimes even Leather. There are also subtle aromas of Brioche and Biscuit.
